Sourced by assistant roaster Shelby on her recent trip to origin, this coffee stood out as one of the best we’ve ever had. Rigorous sorting of coffee cherries selected for peak sugar content in the fruit prior to processing gives this coffee intense sweetness with crisp tropical fruit aromas. From the Andes Mountains in the biologically diverse corridor of Finca Santa Elena, Paula 20Brix is a testament to the work inspired by family traditions. Café Roldán is known for its commitment to environmental and community sustainability, constantly in pursuit of inspiring the community around them. “Brix” refers to the standard of measurement used by Brix Refractometry to determine the amount of dissolved solids in a liquid, in this case, sugar, present in the fruit at the time of picking. This achieved number signifies that the fruit has become perfectly ripe while possessing the highest level of sugar content without becoming overripe.
Through their eternal love of Colombia and each other, farmers Sammy and Paula have uniquely crafted this coffee to highlight the sweetness of life and its potential when lived with passion and love. Dedicated to the backbone of their farms, Paula 20 Brix is named accordingly after Sammy's wife Paula, "the sweetest part of his life and guiding light."
